GOU is a registered trademark of the Yaxell Co. The word mean "The Superb" in Japanese.

Blade

He blade has an extremely sharp cutting edge. It is made out of Japanese SG2 Mirco Carbide power stainless steel, which is enveloped by 100 layers of alternating hard and soft steel. The powdered steel contains a high percentage of carbide, and has an unprecedented hardness of approximately 63 Rockwell. Powdered steel is use because it is has a high purity, and is very homogeneous. Tempered correctly, this combination can result in an exceptionally sharp, and long lasting cutting edge. As the entire blade is carefully ground, the 101 layers are cut through, exposing the beautiful Damascus layering.

Handle

The inner handle is a solid forged 18/10 stainless ingot that has been welded onto the 101 layer blade. The welded junction is invisible, and as strong as the material itself. Yaxell is unique in their use of this super strong handle construction. The scales on each side are made from FDA approved black canvas micarta PLUS, which is a odorless and enormously durable material made from linen cloth, and resin. No wood is used in the handles. The canvas material is dyed black and polished to a brilliant gloss. The material will last for decades, and is highly water resistant. The handles are then attached tightly using 3 stainless steel rivets. The end of the handle is engraved with the "GOU" trade mark.

History and Tradition

Yaxell has been a major knife supplier in Japan since 1932. They have contributed to the advancement of knife technology, and supply superior quality kitchen knives to hotel and restaurant chefs around the world. These top quality knives are now available to discerning home chefs.

The outstanding edge of the Yaxell knives has been achieved by combining advanced technology with unsurpassed knowledge and expertise of the craftsmen making these professional kitchen knives. Their skills have been cultivated in traditional Japanese sword making techniques, handed down from generation to generation over seven centuries in Seki, Japan, the capital of swords and knives.

Special Heat Treatment

Yaxell blades are heated in a kiln t a very high temperature, and then ice hardened. Then, they are again tempered using high temperatures to make the blade strong and durable with long-lasting performance. At the same time, this special heat treatment makes the blade corrosion resistant. The blades are hardened to Rockwell 60-63 degrees, depending on the product.

The key to Yaxell's superior blades is its multi-layered steel. The benefits are:

  • Hardness
  • Sharpness
  • Corrosion resistance
  • Beauty
  • Long lasting edge

Japanese multi-layered steel is made by cladding a super hard core steel, with layers of more flexible stainless steel, leaving just the cutting edge of the harder steel exposed. The result is a sandwiched blade that is tough, but can take an exquisitely keen edge.
